Ingredients:
- 2 kilos of chicken wings
- 4 tablespoons baking powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 5 tablespoons peri peri sauce
- 5 tablespoons dark soy sauce
- 5 tablespoons light brown sugar
- 5 tablespoons honey
- 5 tablespoons melted butter
- 1 tablespoon toasted sesame oil
- 4 garlic cloves, finely sliced
- 1 lemon, sliced
- A handful of fresh parsley
- A handful of pomegranate seeds
Instructions:
- In a bowl, combine baking powder, smoked paprika, salt, and pepper. Toss the chicken wings in this mixture until evenly coated.
- Prepare a baking tray by lining it with foil and placing a wire rack on top. Spray the rack with cooking oil and place the chicken wings on it. Bake in a preheated oven at 200°C for 1 hour, turning the wings halfway through.
- While the wings are baking, make the marinade by mixing the peri peri sauce, soy sauce, brown sugar, honey, melted butter, sesame oil, and garlic in a bowl. Set aside.
- Once the wings are crispy, remove them from the oven and transfer to a large ovenproof dish. Brush the wings with the marinade and return to the oven for 10 minutes. Repeat this step twice more until the wings are golden and crispy.
- Garnish with fresh parsley, lemon slices, and pomegranate seeds. Serve alongside couscous salad and enjoy!
