Buffalo Chicken Wings with Peri Peri Sauce

Ingredients:

  • 2 kilos of chicken wings
  • 4 tablespoons baking powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 5 tablespoons peri peri sauce
  • 5 tablespoons dark soy sauce
  • 5 tablespoons light brown sugar
  • 5 tablespoons honey
  • 5 tablespoons melted butter
  • 1 tablespoon toasted sesame oil
  • 4 garlic cloves, finely sliced
  • 1 lemon, sliced
  • A handful of fresh parsley
  • A handful of pomegranate seeds

Instructions:

  1. In a bowl, combine baking powder, smoked paprika, salt, and pepper. Toss the chicken wings in this mixture until evenly coated.
  2. Prepare a baking tray by lining it with foil and placing a wire rack on top. Spray the rack with cooking oil and place the chicken wings on it. Bake in a preheated oven at 200°C for 1 hour, turning the wings halfway through.
  3. While the wings are baking, make the marinade by mixing the peri peri sauce, soy sauce, brown sugar, honey, melted butter, sesame oil, and garlic in a bowl. Set aside.
  4. Once the wings are crispy, remove them from the oven and transfer to a large ovenproof dish. Brush the wings with the marinade and return to the oven for 10 minutes. Repeat this step twice more until the wings are golden and crispy.
  5. Garnish with fresh parsley, lemon slices, and pomegranate seeds. Serve alongside couscous salad and enjoy!
