Ingredients
For the Chicken Skewers:
-1.5 lb. boneless, skinless chicken breasts, cut into 2-inch pieces
-1 tbsp olive oil (or avocado oil)
-1 tsp dried oregano
-1 tsp dried thyme
-1 tsp cayenne pepper
-Sea salt and freshly ground black pepper, to taste (about 1/4 tsp each)
For the Tzatziki Dip:
- 1 cup plain whole Greek yogurt
- 1/2 cup seeded, grated cucumber
- 3 tbsp fresh dill, chopped
- 2 tbsp fresh lemon juice
- 3 garlic cloves, minced
- Sea salt and freshly ground black pepper, to taste
Serving Suggestions:
- Lemon wedges
- Chopped or cherry tomatoes
- Sliced cucumbers, bell peppers, or red onions
Instructions
- Prepare the Tzatziki:
- In a bowl or jar, combine the Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, sea salt, and black pepper. Taste and adjust seasoning as needed. Refrigerate until ready to serve.
- Soak the Skewers (if using wooden ones):
- If you’re using wooden skewers, soak them in water for at least 20 minutes to prevent them from burning on the grill.
- Preheat the Grill:
- Heat your grill to medium-high.
- Season the Chicken:
- In a medium bowl, add the chicken pieces. Sprinkle with oregano, thyme, cayenne, sea salt, and black pepper. Drizzle with olive oil and toss everything together until the chicken is evenly coated.
- Assemble the Skewers:
- Thread 3-4 pieces of seasoned chicken onto each skewer, leaving a little space between each piece for even cooking.
- Grill the Chicken:
- Place the skewers on the grill, leaving space between them. Close the grill lid and cook for about 7 minutes, flipping the skewers a few times to ensure the chicken is cooked through and evenly browned.
- Serve:
- Serve the grilled chicken skewers with the homemade tzatziki dip, and garnish with lemon wedges, chopped tomatoes, cucumbers, bell peppers, or red onion.
