Ingredients
Dry Ingredients:
-2 cups flour, sifted
-1 tablespoon instant yeast
-1/3 cup sugar (80ml)
-1 tsp fine salt
-4 tablespoons milk powder
Wet Ingredients:
- 1 1/3 cup lukewarm milk
- 1/3 cup lukewarm water
- 7 tablespoons melted butter
- 1 egg, room temperature
Additional Flour:
- 2 1/2 cups flour, sifted
- 1/4 cup flour (60ml), sifted
Method
- Prepare the Oven:
- Preheat your oven to 70°C to warm it up. Once warm, turn off the oven. This will serve as a warm environment for the dough to rise.
- Lightly spray a large bowl with cooking spray and set aside for the dough.
- Mix Dry Ingredients:
- In a large bowl, whisk together 2 cups of sifted flour, instant yeast, sugar, salt, and milk powder.
- Mix Wet Ingredients:
- In a separate bowl, whisk the lukewarm milk, lukewarm water, melted butter, and room temperature egg. Gradually whisk this mixture into the dry ingredients.
- Incorporate Additional Flour:
- Add 2 1/2 cups of sifted flour to the mixture and stir with a spatula. Then add an additional 1/4 cup of sifted flour and begin kneading the dough by hand for about 15 minutes. If it’s a colder day, knead for about 20 minutes. The dough will start sticky but will become soft and slightly tacky as you continue to knead.
- First Rise:
- Place the dough in the greased bowl, lightly spray the top with cooking spray, and cover with a lid or cling wrap. Place the bowl in the warm (but turned off) oven and let the dough rise for 1 1/2 hours, or until it doubles in size.
- Shape the Rolls:
- Once risen, punch down the dough and divide it into 3 equal parts. Shape each part into long rolls by patting them into rounds and following the steps above. Use minimal flour to dust your rolling pin and work surface to avoid over-dusting.
- Second Rise:
- Place the shaped rolls on a greased baking tray and allow them to rise for another 30 minutes in a warm place.
- Bake:
- Preheat the oven to 180°C. Once the rolls have risen, brush them with beaten egg at room temperature and bake in the hot oven for 20-25 minutes until golden brown.
- Optional Finishing Touch:
- Immediately after baking, brush the rolls with melted butter for a soft, shiny finish. Let them cool on a rack, then store in an airtight container.
